Spinach Salad
Layer in a bowl:
Hot Bacon Vinegarette:
2 Eggs
1/4 c Sugar
2/3 c White Vinegar
1/3 c Water
1/2 ts Dry mustard
1 ts Salt
1/4 ts Pepper
12 Strips bacon
4 T Bacon grease
Beat the eggs together with a whisk or fork. Add the next six ingredients and blend well. Place in refrigerator. In a large frying pan, cook the bacon and leave approximately 4 tablespoons of the grease in the frying pan. Crumble the bacon and set aside. Place the egg mixture in the hot grease and cook over medium heat for approximately 5 minutes or until the mixture becomes smooth and slightly thickened. Keep warm until ready to serve. Add the bacon crumbles as you serve it. (Placing bacon directly in dressing causes it to become soggy. Its much better crunchy!)
Serving Suggestions:
Serve with Brussel Sprouts or as a dressing for Spinach Salad.
